This 52% ABV Distillery Exclusive, newly released in December 2021, has been matured in a highly-regarded Pedro Ximénez cask, to achieve rich toffee, dried fruit and Christmas cake flavours.
The food pairing that Chef Jack recommends is fresh oysters from the Menai Strait, off the coast of Anglesey, served just as they come! Their natural saltiness is balanced with the sweet and subtle flavours of toffee and chocolate from the whisky. Our kitchen team recommend simply shucking the oysters over ice with a garnish of pickled shallots and parsley. Enjoy with sriracha sauce and fresh lemon to marry together the sweet, citrus and wood spice finish of the dram. Iechyd da!
