Rhubarb & Ginger Tray Bake Recipe by Val Stones from Great British Bake Off
I’m from Yorkshire and almost every Yorkshire garden has a rhubarb crown or two. Although I live in Somerset I have a crown of rhubarb that I inherited from my mum and dad’s garden. As children we were given a small stick of rhubarb and a little triangular bag made from newspaper and filled with sugar. We dipped the rhubarb stick in the sugar and sucked and chewed on the sweet yet at the same time tart sticks, we thought we were in heaven.

Following the overwhelming demand for our inaugural release whisky in May, we’re working towards our next release which is due for bottling this September. There will be a plentiful supply of our deep amber gold liquid available, that we’ve lovingly crafted and matured here in Abergwyngregyn.

Whisky Launch Update: Raising the bar at Aber Falls!
The launch of our first whisky, and the first to be distilled in North Wales for over 100 years, has meant the Distillery has been a busy place over the last few months.
Our whisky started life in 2018 and then spent the next three years maturing before being disgorged from the casks by our Master Blender, Dr Kirsty McCallum, ably assisted by our extremely talented Distillery team. It was ready for bottling in early May 2021 and went on sale on 17th May at noon. Such was the demand that we had queues out of the door of the visitor centre, and we sold out within one hour of the whisky appearing on our website – now that’s the spirit!

New Bistro & Light Bites Menu
Whether it’s a morning coffee and a tray-bake you’re after, a refreshing river-side gin or two on the terrace, or a delicious dish prepared by our team of talented chefs, our new bistro is at your service!
From Thursday to Monday you can enjoy our Light Bites Menu, which features a host of locally sourced ingredients and savoury dishes. If you’re up bright and early, our Early Riser’s Bap is a must; Anglesey sausages, smoked bacon and free range egg served in a tan lan bakery bap, with a veggie version available on request. The Avocado Toast is another fine choice for an early visit; smashed with chili, topped with tomato chutney, and served on toasted sourdough.

Chef Ellis Barrie Creates Unique Pairing Menu to Compliment Aber Falls Whisky
This week we launched our 100% Welsh, single malt whisky, the first whisky to be distilled in North Wales for more than 100 years.
To mark the launch of the unique single malt, we partnered with Great British Menu finalist and Ready Steady Cook chef, Ellis Barrie, to create two delectable dishes, one savoury and one sweet, to pair with the distillery’s first ever whisky, and the recipes are now available for whisky lovers to try at home!

Aber Falls Inaugural Whisky Release
Marking a significant milestone in our whisky journey, today we launch our first 100% Welsh single malt whisky.
The ‘Inaugural Release’ consists of 2,000 bottles, and is quintessentially Welsh; milled and distilled in North Wales using 100% Welsh malted barley and rock-filtered water from the Aber Falls waterfall. It’s also aged in the Distillery’s local Welsh warehouses, before being bottled on site at the Distillery. This exceptional single malt was distilled in a copper pot still and matured along the coastline of North Wales in a mix of wooden barrels, including American and European oak, Spanish sherry, Virgin oak and Orange Wine casks selected to enhance the flavour profile during maturation.
